- Use the 10 minutes to prep your chips coating; dice your parsley and place it in a bowl together with your cayenne, paprika, salt and orange food coloring or curry powder for the yellow colour.
- Mix you flour together in a big bowl as you add the water slowly to create a thick pasty consistency one you have achieved this add the rest of your spices while mixing slowly.
- Take out the potatoes from the water and place all of them in the mixture and massage with your hands until the are coated well.
- Leave the mixture to set for thirty minutes.
Cooking Time: For fries we like to cook quick to avoid wasting time but for chips masala we like to be patient with our potatoes for the best results.
- Preheat your oil for 2 min and check if it is hot enough to add your wet fries slowly. Constantly but slowly turn your fries for the golden look.
- You can choose to eat your fries like that for they are still famous by the name bhajia but we are making masala so let us continue.
- Once ready place them in a bowl and let them cool off.
The Masala salsa: We gathered the vegetables that we needed so there is not much to do
- Dice each of your veggies as you desire for me i like to cut them to thin slices so i can savour the taste.
- Put your pan in medium heat and add two table spoon of oil or one it is up to you.
- Add your onions and your bell peppers and garlic, mix mix mix until they have a smooth light texture and then add your ketchup together with your chopped tomatoes and a generous amount of soy sauce for the tangy taste. After i add my cooked meat (I like to prepare my meat by boiling with milk to make it soft) to get my combination of fries and protein
- For all fans of having vegan just add your chopped spinach or a few leaves of it to your sauce and then let it saute.
- Once you are satisfied with the sauce add your cooked fries in and mix evenly.
Serving:
- I like to serve mine with avocados and my choice of cold drink.Enjoy!!!
